Vegetable Bolognaise

So many vegies, plus wonderful lentils. All the flavours in this sauce blend so well together, you won’t even miss the meat. This makes up a huge batch, we eat it with zoodles, pasta, or make a vegetarian lasagne with it. Any leftovers? Try it on toast with boiled eggs for breakfast, or freeze it for later use.
