Black Rice Dessert Soup
The first time we came across this simple, soupy dessert in Vietnam we were instantly hooked. It’s all there – creamy, sweet and coconutty, with texture from the al dente rice. What’s not to love? It’s amazing hot or cold. Good quality vanilla bean yoghurt is a must.
- 200g black rice
- 70g brown sugar
- 250ml coconut cream
- 1 tsp vanilla extract
- Vanilla bean yoghurt, to serve
- Place 500ml water in the thermal bowl. Insert the internal steaming basket. Place black rice and 500ml water in the stainless steel bowl that came with the XL steamer (or any other bowl that will fit in the internal steamer). Run the steam program for 1 hour.
- Stir through the brown sugar, coconut milk and vanilla. Serve.
HINT: Rice cooking times will vary depending on the brand of rice used. This rice should be really tender and soft.
