Chocolate Sheet Cake

This cake should come with a warning it's THAT good. My son and his friends wouldn't wait for it to cool and they dug in, so I did too. It was delicious all warm and gooey, with the icing dripping everywhere – pure bliss! You can always avoid the mess and wait for it to cool before cutting it into slabs, it's nice that way too!

Ingredients
  

  • 240g Greek or vanilla yoghurt
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 250g butter, cut into 2 cm pieces
  • 60g cocoa
  • 1 cup just-boiled water
  • 500g plain flour
  • 500g caster sugar

Icing

  • 100g butter
  • 25g cocoa
  • 400g icing sugar
  • 80ml water
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 180 degrees. Line a large baking tray with baking paper. Mine is 25cm x 40cm, so something similar will do.
  • Place yoghurt, eggs, baking powder and vanilla in the thermal bowl. EXPERT / 30 seconds / speed 10 / 0 degrees / cap ON. Stop and scrape down the sides if needed. Pour into a bowl and set aside.
  • Without washing the thermal bowl add the butter pieces and run EXPERT / 2 minutes / speed 3 / 100 degrees / cap ON, or until melted.
  • Add cocoa and just-boiled water. EXPERT / 1 minute / speed 8 / 100 degrees / cap ON. Stop and scrape down the sides if needed.
  • Add flour, caster sugar, and the mixture of butter and egg that you've set aside. Run the Cake / Pastry program. Stop and scrape down the sides if needed. Pour into prepared baking tray and bake for 25-30 minutes, or until a skewer inserted into the centre comes our clean.
  • While the cake is baking prepare the icing as it needs to be poured over the cake while it's still hot. Place the butter in the thermal bowl and run it at speed 3 at 100 degrees until it has melted. Add the cocoa, icing sugar, water and vanilla. EXPERT / 45 seconds / speed 14 / 0 degrees / cap ON. Stop and scrape down the sides if needed.
  • As soon as the cake is removed from the oven pour over the prepared icing. Once cooled, cut into slabs, or eat while it's still warm and drippy!
